Date bars are an amazing treat to make from scratch, wrap in plastic and pop into your regatta bag. In fact, throw a few in your cox kit to make sure you have that zing of natural energy at the end of a long practice.

Pumpkin-Peanut Butter Date Bars

1 lb dates, pitted

1/4 cup raw pumpkin seeds

3 T peanut butter

1 1/2 T cocoa powder

Pumpkin-Chia Seed Date Bars

1 lb dates, pitted

1/4 cup raw pumpkin seeds

2 t chia seeds

To make either recipe:

Put the ingredients into your blender.

Pulse the blender to grind the ingredients into a coarse paste you can form into a large patty on a cutting board. Cut into 2" squares and seal in plastic wrap.

They'll last up to two weeks in your 'fridge.
